Hello, all of you gorgeous gals! And of course, any gentleman, SB readers, as well! Fit Chef Lindsey here, and I’m excited to be back! Last week we had you curling and dipping for toned arms on your wedding day. This week we’re taking it a little easier on you and we’re hooking you up with a delicious and nutritious dinner recipe to serve to your beau!
We’ve all heard that the way to a man’s heart is through his stomach. And for me, this couldn’t be more true. I had been cooking for years when I met my extremely fit husband Daniel, but let’s just say he wasn’t privy to my tacos, enchiladas or Mexican cinnamon rolls (hey, those definitely counted as cooking in college dorms!). See, I was reared in the heart of New Mexican culture and cuisine, which, of course, means I was born with the tortilla gene! Until that day when mi novio said, “Listen, senorita, te amo, but we must start cooking healthier here if you’re going to satisfy my healthy Dan the Man lifestyle.” (nicknames y espanol added for emphasis.) So, I tossed aside the rice and beans and got busy experimenting with new healthier things. It worked like a charm for my Dan the Man, and here I’ll show you one of the recipes that still has him eating out of the palm of my hand!
Broiled Steak with Fresh Fruit & Feta Salsa
2-4 of Your Favorite Steaks (mine are Top Sirloin, Filet & NY Strip)
Sea Salt & Pepper
Chopped Ripe Peach
Fresh Jalapeno (seeded)
Juice of 1 Fresh Lime
Preheat broiler. Trim excess fat from steaks. Drizzle olive oil and rub into steaks on both sides. Season with salt and pepper on both sides. Spray non-stick cooking spray on a grill pan. Place seasoned steaks on pan and place on an oven rack that’s 4 to 5 inches from the broiler in the oven. Cook for 3-4 minutes on each side, depending on the thickness of the steak. When the steaks are done, remove the pan from the oven, using a thick oven mitt, and allow the meat to rest for 5-10 minutes before slicing.
Combine all of the salsa ingredients in a medium bowl and toss to coat. Spoon salsa onto steaks and serve!
